Homemade Strawberry Shortcake with Buttermilk Biscuits
For the strawberries:
• 2 pounds fresh strawberries, sliced
• 1/3 cup sugar
• 1 tablespoon lemon juice
For the biscuits:
• 2 cups all-purpose flour
• 1 tablespoon baking powder
• 2 tablespoons sugar
• 1/2 teaspoon salt
• 1/2 cup cold butter, cubed
• 3/4 cup cold buttermilk
For serving:
• Fresh whipped cream
Combine strawberries, sugar, and lemon juice in a bowl and let stand for at least 30 minutes.
Preheat oven to 425°F.
Mix flour, baking powder, sugar, and salt in a large bowl. Cut in the butter until the mixture resembles coarse crumbs.
Stir in buttermilk until the dough just comes together. Pat dough into a 1-inch-thick rectangle and cut into rounds using a biscuit cutter.
Bake for 12–15 minutes, until golden brown.
Split biscuits and layer with strawberries and whipped cream.
Mixed Berry Freezer Jam
• 2 cups crushed strawberries
• 1 cup crushed raspberries
• 1 cup crushed blackberries
• 5 cups sugar
• 1 package freezer jam pectin
• Water (according to package directions)
Wash and crush berries. Combine berries and sugar in a large bowl and let stand for 10 minutes. Prepare pectin according to package directions.
Stir pectin mixture into berries for 3 minutes until sugar is dissolved. Pour into clean freezer-safe jars, leaving 1/2 inch of headspace.
Let stand at room temperature for 24 hours. Refrigerate for up to 3 weeks or freeze for up to 1 year.
